Appetizers and Dips


BLACK BEAN AND CORN DIP
1 can black beans (rinsed and drained)
1 can corn (drained)
1/2 red onion (diced)
1/4 cup olive oil
1/4 cup lime juice
1/2 cup sour cream 
1/4 tsp sugar
salt and pepper to taste

Mix first three ingredients.  In a separate bowl, mix remaining ingredients and chill.  Toss with the dressing and serve with tortilla chips.  If using the next day, wait to toss with the dressing.  This also makes a great salad.  Just serve over lettuce and crumble tortilla chips on top to garnish.


COLD BEAN DIP
1 can refried beans
1 package finely shredded sharp cheddar cheese
1 small can chopped black olives
1/2 cup mayonnaise
1 8oz container sour cream
1 package taco seasoning mix

Mix last three ingredients well.  Add to remaining ingredients.  Place in serving dish and chill.  Serve with tortilla chips.  If looking to make it look a little fancier, layer the items and top with black olives, diced tomatoes and lettuce.



CREAMY RANCH CHICKEN DIP
2 blocks cream cheese (softened)
1 8oz bottle ranch dressing
1 can chicken (drained)
1 package finely shredded sharp cheddar cheese

Mix all ingredients together and place in a 9x13 baking dish.  Bake at 375° for 30 minutes.  Serve with tortilla chips.



HOT BEAN DIP

1 can refried beans
1 package finely shredded sharp cheddar cheese
1 small can chopped black olives
1/2 cup mayonnaise
1 8oz container sour cream
1 package taco seasoning mix

Mix last three ingredients well.  Add to remaining ingredients.  Place in a 9x13 baking dish and bake at 375° for 30 minutes or until bubbly.  Serve with tortilla chips.  
If I have leftover dip, I like to use the next day as a base on tortillas.  I top the dip with chicken, corn and lettuce.  Quick and easy dinner for leftover dip and chicken.


RANCH BEAN DIP

2 cans refried beans
1 package finely shredded sharp cheddar cheese
16 oz container sour cream
1 oz package ranch dressing mix

Mix all ingredients.  Place in a 9x13 baking dish and bake at 375° for 30-45 minutes.  Serve with tortilla chips or warm tortillas.



TACO DIP
1 lb ground beef
1 can refried beans
1 packet taco seasoning mix
8 oz container sour cream
1 package finely shredded sharp cheddar cheese

Brown ground beef and drain.  Mix beans, ground beef and taco seasoning.  Spread bean mixture in the bottom of a 9x13 baking dish.  Spread the sour cream on top of the bean mixture and top with cheese.  Bake at 375° for 30 minutes or until the cheese is bubbly.  Serve with tortilla chips.



WAFFLE FRY DIP
1 8oz container sour cream
1/2 package finely shredded sharp cheddar cheese
8 bacon slices (crumbled)
1 bag waffle fries

Mix first three ingredients together.  Bake waffle fries according to directions.  Serve as a dip for the waffle fries or as a baked potato topping.
