Crock Cooker Recipes-ground beef

STUFFED PEPPERS
4 bell peppers
1 lb ground beef
1/2 c ketchup
1 c sharp cheddar cheese diced (optional)
salt and pepper to taste
3/4 cup water


Cut tops off peppers and remove seeds.
Combine ground beef, ketchup, cheese, salt and pepper.
Divide meat mixture into quarters and place in peppers.
Replace pepper top.
Place into crock cooker.
Add water.
Cook on low for 6-8 hours.


RANCH MEAT LOAF
2 lbs ground beef
1 envelope ranch dressing mix
1 bell pepper diced
1 small onion diced
2 eggs
water (enough to moisten)


Mix all ingredients together and shape into a loaf.  
Place in crock cooker.
Cook on low for 8 hours.


TACO CASSEROLE
2 lbs ground beef browned and drained
2 small onions chopped
30 oz can tomato sauce
1 can chopped tomatoes-drained
1 can corn-drained
2 envelopes taco seasoning mix
1 box macaroni or spiral noodles-uncooked
3/4 cup water
Serve with:
1 bag shredded sharp cheddar cheese
sour cream

Combine all ingredients and cook on low for 6-8 hours.  Top with cheese and sour cream.


CHILI
2 cans dark red kidney beans-rinsed and drained
2 cans chili beans with sauce
2 cans chopped tomatoes-undrained
2 lbs ground beef-browned with a garlic pepper seasoning
2 envelopes Chili-O seasoning
water to desired thickness


Combine all ingredients in crock cooker and cook on high 3-4 hours.  I serve mine with rice.


ENCHILADA BAKE
1 1/2 lbs ground beef-browned and drained
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of diced tomatoes-drained
1 can pinto beans (may substitute black beans)-drained
3 tsp chili powder
1 cup shredded sharp cheddar cheese
1 cup shredded jack cheese
12 corn tortillas


Combine meat, soups, tomatoes, beans, chili powder and one can of water.  Layer mix, tortillas and cheese.  Keep layering until all of the mixture is used.  Cook on low for 6-8 hours.


LASAGNA
1 lb ground beef-browned and drained
1 large jar spaghetti sauce
1 can chopped tomatoes-drained
1 can tomato paste
1 container ricotta cheese
1 c parmesan cheese
1 bag shredded mozzarella cheese
2 bell peppers chopped
1 box no cook lasagna noodles 


Mix meat, spaghetti sauce, tomatoes, tomato paste, ricotta cheese, bell peppers, and parmesan cheese.  Place a small amount of mixture on bottom of crock cooker then noodles.  You may have to break them to fit.  Add mixture and sprinkle with mozzarella cheese. Repeat layers making sure that you end with sauce on top.  Cook on low 6-8 hours.  


CREAMY RANCH HAMBURGER PATTIES
2 lbs ground beef
1 envelope ranch dressing mix
1 can cream of mushroom soup
1/2 cup milk


Combine ranch dressing mix and ground beef and form into patties.  Mix soup and milk and place a little in the bottom of the crock cooker.  Add hamburger patties and cover with remaining soup mix.  Cook on low 6-8 hours.  


CREAMY RANCH MEATBALLS
2 lbs ground beef
1 envelope ranch dressing mix
2 cans cream of mushroom soup
1/2 cup milk



Combine ranch dressing mix and ground beef and form into meatballs.  Brown meatballs.  This allows them to stay together better.  Combine soup and milk and place a small amount in crock cooker.  Add meatballs and remaining soup mixture.  Cook on low 6-8 hours.  




CUBE STEAK WITH GRAVY
1 family pack of minute/cube steak
1 envelope onion soup mix
2 cans cream of mushroom soup
3/4 cup water


Combine onion soup mix and water.  Stir until dissolved.  Add two cans of cream of mushroom soup and stir until well incorporated. Place cube steak on top.  Cook on low 6-8 hours.  Serve with mashed potatoes or rice.  The gravy is the best gravy ever!
